Are your coffees organic?
While our beans are sourced from farms that practice organic farming methods and practices, not all have an organic certification. The process of obtaining and maintaining an organic certification can be very costly and many small farmers simply lack the resources do so. They likely grow things in an organic manner, but lack the certification. The vast majority of coffee grown in Ethiopia, for example, is considered "organic by default," even if it doesn't carry certification. 

How quickly do you ship out orders?
We roast on Tuesday - Friday. Most orders ship the next business day after they are received. Orders received over the weekend will typically ship on Monday or Tuesday, but may not go out until Wednesday depending on inventory levels. You will receive an email with tracking information as soon as your order has shipped.

How many cups of coffee will I get from one bag?
Obviously that depends on how strong you like your coffee and how big your cup is. A standard 12 ounce bag of coffee is 340 grams. Using a common ratio of 60 grams of coffee to 1 liter of water (or a 1:16 ratio) you will get approximately:

24 .....   8 oz cups
19 ..... 10 oz cups
12 ..... 16 oz cups

 
Are whole beans better than ground coffee?
They are not necessarily better, but they are fresher. Oxygen is the enemy of coffee. Given that ground coffee has much more surface area exposed to oxygen than whole beans, it will go stale much faster. Once you open a bag of ground coffee you should try to use it within 5-7 days. Your open bag of beans will be good for 3-4 weeks. 

How long will my unopened coffee stay fresh?
Our beans are packed in sealed bags immediately after roasting and will remain fresh in the unopened bag for 5-6 months past the roast date. Once the bag is opened it is best to use it within a month. 

What is the valve for on your bags?
One of the byproducts of roasting is CO2 gas. The one-way degassing valve built into our bags allow this CO2 to escape while keeping oxygen (the enemy of coffee freshness) from entering.

What is the best way to store my coffee?
Just keep it at room temperature in the original bag. The degassing valve and zipper seal will keep the oxygen out. There are also a number of types of airtight containers available that you can use as well if you prefer.

Is there a particular grinder you recommend?
You definitely want to go with a burr grinder as opposed to a blade. The Baratza Encore is a very popular choice. It's affordable and very durable. Baratza sells replacement burrs and will also repair your Encore should it ever break.
